🧂 Ingredients
- 2 large eggplants (baingan)
- 2 medium onions, finely chopped
- 2 medium tomatoes, finely chopped
- 1 tbsp ginger-garlic paste
- 2 green chilies, chopped
- 2 tbsp oil
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
🍳 Instructions
- Roast Eggplants: Roast eggplants over an open flame or in the oven until skin is charred and flesh is soft. Peel and mash.
- Sauté Onions & Spices: Heat oil, sauté onions until golden, add ginger-garlic paste and green chilies. Cook 2–3 minutes.
- Add Tomatoes: Add chopped tomatoes, turmeric, coriander powder, and salt. Cook until tomatoes are soft and oil separates.
- Add Eggplant: Stir in mashed eggplant, mix well, and simmer for 5–6 minutes.
- Finish: Sprinkle garam masala and garnish with fresh coriander leaves.
- Serve: Hot with roti, paratha, or steamed rice.
