Navratan Korma is a royal North Indian curry made with nine (navratan) vegetables, fruits, and nuts cooked in a creamy cashew-based gravy. Perfect with naan, roti, or jeera rice for festive occasions and special meals.
🧂 Ingredients
For the Curry
- 1 cup mixed vegetables (carrot, beans, peas, cauliflower, capsicum, etc.)
- ½ cup paneer cubes (optional)
- 2 tbsp cashew nuts (soaked and ground to paste)
- 1 medium onion, finely chopped
- 2 medium tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 2 tbsp oil or ghee
- ½ cup fresh cream
- 1 tsp sugar (optional)
- Salt to taste
Spices
- 1 tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- ½ tsp cardamom powder
🍳 Instructions
- Prepare Cashew Paste: Soak cashews in warm water for 15 mins, then grind into smooth paste.
- Sauté Base: Heat oil, add cumin seeds, then onions. Sauté until golden brown.
- Add Tomato & Spices: Add ginger-garlic paste, tomato puree, turmeric, coriander powder, and salt. Cook until oil separates.
- Add Vegetables: Mix in the mixed vegetables and cook for 5–7 minutes on medium flame.
- Add Cashew Paste & Cream: Stir in cashew paste, cream, sugar, and cardamom powder. Simmer 5 minutes.
- Add Paneer: Gently fold in paneer cubes and cook 2–3 minutes more.
- Finish & Serve: Sprinkle garam masala and serve hot with naan, roti, or jeera rice.
