Navratan Korma is a royal North Indian curry made with nine (navratan) vegetables, fruits, and nuts cooked in a creamy cashew-based gravy. Perfect with naan, roti, or jeera rice for festive occasions and special meals.

🧂 Ingredients

For the Curry

  • 1 cup mixed vegetables (carrot, beans, peas, cauliflower, capsicum, etc.)
  • ½ cup paneer cubes (optional)
  • 2 tbsp cashew nuts (soaked and ground to paste)
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, pureed
  • 1 tbsp ginger-garlic paste
  • 2 tbsp oil or ghee
  • ½ cup fresh cream
  • 1 tsp sugar (optional)
  • Salt to taste

Spices

  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp cardamom powder

🍳 Instructions

  1. Prepare Cashew Paste: Soak cashews in warm water for 15 mins, then grind into smooth paste.
  2. Sauté Base: Heat oil, add cumin seeds, then onions. Sauté until golden brown.
  3. Add Tomato & Spices: Add ginger-garlic paste, tomato puree, turmeric, coriander powder, and salt. Cook until oil separates.
  4. Add Vegetables: Mix in the mixed vegetables and cook for 5–7 minutes on medium flame.
  5. Add Cashew Paste & Cream: Stir in cashew paste, cream, sugar, and cardamom powder. Simmer 5 minutes.
  6. Add Paneer: Gently fold in paneer cubes and cook 2–3 minutes more.
  7. Finish & Serve: Sprinkle garam masala and serve hot with naan, roti, or jeera rice.
