Palak Kofta is a royal North Indian curry featuring soft paneer and vegetable dumplings in a creamy spinach gravy. Perfectly paired with naan, paratha, or jeera rice for festive occasions or special dinners.

🧂 Ingredients

For the Koftas

  • 150g paneer (cottage cheese), grated
  • 1 cup boiled mashed potatoes
  • ½ cup grated carrots or finely chopped vegetables
  • 2 tbsp cornflour
  • Salt & pepper to taste
  • Oil for deep frying

For the Gravy

  • 3 cups fresh spinach leaves, washed and chopped
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, pureed
  • 1 tbsp ginger-garlic paste
  • 2 green chilies, slit
  • 2 tbsp oil or ghee
  • ½ cup fresh cream
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • Salt to taste

🍳 Instructions

  1. Prepare Koftas: Mix paneer, mashed potatoes, vegetables, cornflour, salt, and pepper. Shape into small balls and deep fry until golden. Set aside.
  2. Blanch Spinach: Boil spinach leaves for 2–3 minutes, drain, and blend into smooth puree.
  3. Cook Gravy: Heat oil, add onions, sauté until golden. Add ginger-garlic paste and tomato puree, cook until oil separates.
  4. Add Spinach: Stir in spinach puree, turmeric, coriander powder, and salt. Simmer for 5–6 minutes.
  5. Finish Gravy: Add cream and garam masala. Cook for 2 more minutes on low flame.
  6. Combine: Add fried koftas to the gravy just before serving to prevent sogginess.
  7. Serve: Hot with naan, paratha, or jeera rice.

💡 Tips & Serving Suggestions

Fry koftas on medium flame to ensure they are crisp outside and soft inside. Serve immediately after adding to gravy for best texture. You can replace some paneer with boiled mashed potatoes for lighter koftas.
