🧂 Ingredients
For the Curry
- 250g paneer (cottage cheese), cubed
- 4 cups fresh spinach leaves, washed and chopped
- 1 medium onion, finely chopped
- 2 medium tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 2 green chilies, slit
- 2 tbsp oil or ghee
- ¼ cup fresh cream (optional)
Spices
- 1 tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Salt to taste
🍳 Instructions
- Blanch Spinach: Boil spinach leaves for 2–3 minutes, drain, and blend into a smooth puree.
- Sauté Base: Heat oil, add cumin seeds and chopped onions. Sauté until golden.
- Add Tomato & Spices: Add ginger-garlic paste, tomato puree, turmeric, and coriander powder. Cook until oil separates.
- Add Spinach: Stir in spinach puree, salt, and cook for 5–6 minutes on low flame.
- Add Paneer: Gently add paneer cubes and simmer for 3–4 minutes.
- Finish: Sprinkle garam masala and swirl in fresh cream before serving.
- Serve: Hot with naan, roti, or jeera rice.

Use fresh spinach for best color and taste. Blanching removes raw flavor and enhances the green color. For extra richness, add a few cashews while blending the spinach.
