Pinni is a traditional Punjabi sweet enjoyed especially in winters. Made with whole wheat flour, ghee, sugar, and dry fruits, this rich and energy-packed treat keeps the body warm and nourished during cold months. It’s often prepared in Punjabi households during festivals or as a winter snack.

🧂 Ingredients

  • 2 cups whole wheat flour (atta)
  • 1 cup ghee (clarified butter)
  • 1 cup powdered sugar or jaggery (gur)
  • 1/4 cup edible gum (gond), optional
  • 1/2 cup chopped almonds
  • 1/2 cup chopped cashews
  • 2 tbsp raisins
  • 1/4 tsp cardamom powder

🍳 Instructions

  1. Roast Flour: Heat ghee in a heavy pan. Add whole wheat flour and roast on low flame until it turns golden brown and aromatic.
  2. Add Gond (if using): In a separate pan, fry edible gum until it puffs up, then crush and add to roasted flour.
  3. Mix Dry Fruits: Add chopped almonds, cashews, raisins, and cardamom powder. Stir well.
  4. Sweeten: Remove from heat, let it cool slightly, then mix in powdered sugar or jaggery.
  5. Shape Pinnis: When warm, take small portions and shape into round balls. Allow to cool and set.

Store Pinni in an airtight container for up to 2 weeks. For richer flavor, use desi ghee and coarsely chopped nuts. Add crushed gond for extra crunch and warmth during winter.
